Healthy(ish) Rocky Road

I'm the first to admit I am a little partial to chocolate and I am often wanting something with a chocolatey hit but has a little more nutritional value than a couple of squares of chocolate. And that is how my healthy(ish) rocky road came about.

This is the perfect balance of good for you ingredients and tasty treat. This healthy rocky road has added protein and some high fibre ingredients to keep you and your body happy.

This recipe is gluten free but you can of course make this recipe with gluten containing ingredients if you wish!

Healthy(Ish) ROCKY road:

Makes about 24 bite-size pieces

Ingredients: 40g gluten free breakfast biscuits*

60g of sultanas or raisins 20g chopped almonds and macadamia nuts 40g dried cranberries 70g fibre flakes - I use the Doves Farm gluten free ones - but normal bran flakes would be fine if you aren't gluten free. 6 marshmallows 2 scoops of Form Nutrition Pureblend Protein Powder

Chocolate mix ingredients

120g dates 25g maple syrup 3 tbsp cocoa powder 1 tbsp chocolate Nesquik powder - you can use any hot chocolate powder or use more cocoa powder for a darker chocolate taste 3-4 tbsp unsweetened almond milk 1 tbsp linseed powder 120g coconut oil

*These are the packs of biscuits that are sold as an alternative to a cereal bar, I use these as they often have more fibre, a lower GI and less sugar than a standard digestive


  1. Roughly crumble the fibre flakes and biscuits into a microwaveable bowl. You want mostly 1cm size pieces with some a little larger

  2. Then add the dried fruit, nuts and protein powder

  3. Cut the marshmallows into smaller pieces using scissors and put them into the bowl

  4. Melt the coconut oil and then add it and all the chocolate mix ingredients (only 3tbsp of the milk) to a high powered blender (I use a vitamix) or food processor

  5. Blend till the mix is quite smooth - it will still be slightly lumpy but there shouldn't be huge bits of dates in it. You may need to add the 4th tbsp of milk to get the right consistency

  6. Mix the chocolate mix with the cereal and fruit mix until fully combined

  7. Microwave the whole mix for 40-50seconds till the marshmallows are fully melted and stir again

  8. Transfer into a freezer proof dish and press the mix down a little so that it forms one solid chocolatey heaven

  9. Transfer to the fridge for at least 4 hours, if you are in a rush transfer it to the freezer for 30 minutes after 3 hours.

  10. Cut into pieces and enjoy your healthy(ish) rocky road

Get creative if you want and change some of the ingredients, you could use cornflakes or add glace cherries if you like them. The main point of this healthy(ish) rocky road recipe is to help you get a chocolate fix while also getting some reasonable nutrition too. Of course you can have healthier snacks but I find this is the perfect balance for what I want.

Tip: Store in an airtight container in the fridge and remove 5-10minutes before eating

Note: I normally cut this rocky road into small bite-size pieces about 3x3cm and then that way I can either have 1 or if I am wanting something more substantial I can have a few.
